Ingredients

  • 16 oz Chicken breast boneless skinless cut into 4 oz portions
  • 2 cups Buttermilk
  • 2 cups All-purpose flour
  • 1 tbsp Dried oregano
  • 1 tsp Paprika
  • 4 cups Vegetable oil
  • 6 tbsp Hot sauce
  • 4 tbsp Maple syrup

Waffles - or use store bought waffles

  • Waffles
  • Nonstick spray
  • 1.25 cups All-purpose flour
  • 1.25 tbsp Sugar
  • 1 tsp Baking powder
  • 1 Egg
  • 1.25 cups Buttermilk
  • 4 tbsp Butter melted

Instructions

  • Soak the chicken in buttermilk.
  • In a bowl, mix the flour, oregano, paprika, and season with salt and pepper.
  • Heat the oil in a pot over medium heat. Make sure the oil is hot but not so hot that the pan is smoking.
  • Coat the chicken thoroughly in the flour, using your hands to pack on the flour coating.
  • Working in batches; add the chicken pieces to the hot oil in the pan and fry on one side for 5 to 7 minutes, until golden brown. Use tongs to turn the pieces over and fry for a further 5 to 7 minutes, until golden brown or until an internal temperature of 160°F is reached. Serve the chicken over the waffles; drizzle with hot sauce and maple syrup.

  • In a bowl, whisk together flour, granulated sugar, baking powder, and season with salt and pepper. Whisk in the egg, buttermilk, and melted butter.
  • Cook the waffles according to the instructions on the waffle maker.
