Ingredients

Chicken Cordon Bleu

  • 8 oz Chicken breast boneless skinless
  • 1/2 cup All-purpose flour
  • 1/2 cup Seasoned bread crumbs
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Paprika
  • 1 large Egg beaten
  • 2 TBSP Vegetable oil
  • 4 slices Deli ham
  • 4 slices Swiss cheese

Peas

  • 1 cup Frozen peas
  • Salt to taste

Butter Noodles

  • 3 oz Egg noodles
  • 2 TBSP Butter
  • Salt to taste

Tossed Salad

  • 4 cups Mixed greens
  • 1/2 Cucumber sliced
  • 1/2 cup Cherry tomatoes halved
  • 1/4 cup Red onion thinly sliced
  • Your choice of salad dressing

Apple Cider

  • 24 oz Apple cider

Instructions

  • Prepare the Chicken Cordon Bleu: Preheat the oven to 375°F (190°C).
  • Place each chicken breast between two sheets of plastic wrap and pound them to an even thickness, about 1/4 inch.
  • In a shallow dish combine bread crumbs, salt, pepper, and paprika.
  • Dip each chicken into the flour then beaten egg then coat it in the bread crumb mixture.
  • Heat the vegetable oil in a skillet over medium heat. Brown the chicken on both sides. Then transfer to a baking sheet. Top with ham and cheese.
  • Bake for about 15 - 20 minutes, or until the chicken is cooked to an internal temperature of 160F / 71C.
  • Prepare the Butter Noodles: Cook the egg noodles according to the package instructions. Drain the noodles and return them to the pot. Add the butter to the pot and toss the noodles until the butter is melted and the noodles are evenly coated. Season with salt to taste.
  • Cook the Peas: Bring a pot of salted water to a boil. Add the frozen peas and cook them according to the package instructions. Drain the peas and season with salt to taste.
  • Assemble the Tossed Salad: Portion the mixed salad greens, cucumber slices, cherry tomatoes, and thinly sliced red onion. Drizzle the salad dressing of your choice over the salad.
  • Serve the chicken cordon bleu with peas, butter noodles, salad, and apple cider.
