Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 2 tbsp Red onion
  • 1/2 Green bell pepper seeded and sliced into thin strips
  • 4 cloves Garlic sliced
  • 8 oz Sirloin steaks cut into thin strips
  • 1/4 tsp Dried oregano
  • 1 cup Fire roasted tomatoes diced
  • 1/2 cup Chicken broth
  • 1 tbsp Tomato paste
  • 4 tsp Ricotta cheese
  • 2 slices Crusty bread toasted
  • Fresh parsley garnish

Instructions

  • Heat a saute pan over medium heat. Once hot, add the oil. Saute the onion, peppers, and garlic until softened. Then push to the side of the pan. Add the sirloin and oregano, brown well. Mix everything together and saute. Season with salt and pepper.
  • Stir in the tomatoes, broth, and tomato paste. Bring to a simmer to build flavor and reduce the liquid to a creamy consistency. Season with salt and pepper to taste. Then remove from the heat. Scatter small dollops of ricotta on top.
  • Preheat the oven broiler on high.
  • Place the pan under the broiler for a few minutes until the ricotta is melted.
  • Serve with bread. Garnish with parsley.
