Ingredients
- 4 Corn Tortillas 6 inch
- 2 tbsp Extra-virgin olive oil
- 8 Eggs
- 1 Tomato diced
- 2 Avocados peeled and diced
- 4 oz Colby cheese shredded
- 1 tbsp Fresh cilantro chopped
- 6 oz Cajun chicken sausage sliced
Instructions
- Preheat the oven to 375 degrees. Place the corn tortillas on a baking sheet and bake in the oven until crispy, about 8 - 10 minutes.
- In a nonstick pan over medium heat brown the chicken sausage on both sides. (if you cannot find cajun chicken sausage, season regular chicken sausage with cajun spice)
- In a nonstick pan over low medium heat, add the olive oil. Carefully crack the eggs into the pan being careful not to break the yolks. Cook for about 3 - 4 minutes until the whites are firm and no longer runny.
- Layer the corn tortilla with cheese, chicken sausage, eggs, dice tomato, avocado and garnish with cilantro. Season with salt and pepper before serving.
