Preheat the oven to 375 degrees. Place the corn tortillas on a baking sheet and bake in the oven until crispy, about 8 - 10 minutes.
In a nonstick pan over medium heat brown the chicken sausage on both sides. (if you cannot find cajun chicken sausage, season regular chicken sausage with cajun spice)
In a nonstick pan over low medium heat, add the olive oil. Carefully crack the eggs into the pan being careful not to break the yolks. Cook for about 3 - 4 minutes until the whites are firm and no longer runny.
Layer the corn tortilla with cheese, chicken sausage, eggs, dice tomato, avocado and garnish with cilantro. Season with salt and pepper before serving.
