Ingredients
- 1 lb Ground beef
- 4 oz Mexican cheese blend shredded
- 6 oz Black beans drained and rinsed
- 4 Whole wheat tortilla
- 4 tsp Extra-virgin olive oil divided by number of portions
- 4 tsp Sour cream
- 1 cup Romaine lettuce shredded
- 1/2 Tomato
Instructions
- **If making multiple quesadillas store the cooked ones in a 200 degree oven to keep them warm until all are done**
- In a nonstick pan over medium heat cook the ground beef breaking the chunks into smaller pieces using a kitchen utensil. Once cooked drain and set aside.
- Spread cheese, ground beef, and beans on a tortilla in an even layer and fold in half.
- Preheat a nonstick pan over low-medium heat. Add in the oil and quesadilla and cover with a lid. Cook until one side is golden brown, about 2 - 4 minutes and flip over, cooking the other side for another 2 - 4 minutes. Remove from the pan and cut into pieces, serve with sour cream on the side and garnish with shredded lettuce and diced tomato.
