Beef and Bean Quesadilla

Ingredients

  • 1 lb Ground beef
  • 4 oz Mexican cheese blend shredded
  • 6 oz Black beans drained and rinsed
  • 4 Whole wheat tortilla
  • 4 tsp Extra-virgin olive oil divided by number of portions
  • 4 tsp Sour cream
  • 1 cup Romaine lettuce shredded
  • 1/2 Tomato

Instructions

  • **If making multiple quesadillas store the cooked ones in a 200 degree oven to keep them warm until all are done**
  • In a nonstick pan over medium heat cook the ground beef breaking the chunks into smaller pieces using a kitchen utensil. Once cooked drain and set aside.
  • Spread cheese, ground beef, and beans on a tortilla in an even layer and fold in half.
  • Preheat a nonstick pan over low-medium heat. Add in the oil and quesadilla and cover with a lid. Cook until one side is golden brown, about 2 - 4 minutes and flip over, cooking the other side for another 2 - 4 minutes. Remove from the pan and cut into pieces, serve with sour cream on the side and garnish with shredded lettuce and diced tomato.
