French Fries
- 2 medium Potatoes about 1/2 lb of potato per portion
- 4 cups Canola oil or your preferred neutral oil with a high smoke point
- 4 TBSP Ketchup
Sliders
- 6 Slider buns recommend using dinner rolls like martins potato rolls or a similar smaller type bun
- 8 oz Ground beef
- 2 tsp Garlic powder
- 3 tsp Worcestershire sauce
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1 TBSP Extra-virgin olive oil plus more for brushing the buns
- 1 TBSP Butter
- 1/2 cup Onion diced
- 4 slices Cheddar cheese cut into square to fit the buns
- Ketchup
- Yellow mustard
- 1/3 cup Pickle slices
Sparkling Water
- 24 oz Sparkling water cold
Instructions
- Prep the ingredients per the instructions above.
- Prep the potatoes: Cut the potatoes into 1/4-inch thick sticks. Place into a large bowl and cover completely with cold water for 20 minutes (see note). Drain well and pat dry with a towel.
- Preheat the broiler on low. Remove the rolls from the packaging in one piece. With a serrated knife, cut crosswise through all of the rolls at once, to divide the top half from the bottom (keeping the sides of the rolls intact). Place both halves cut side up on a sheet tray and broil for 2 minutes until lightly toasted. Set aside.(If using slider rolls, separate the tops from the bottoms and place cut side up on the sheet tray, sides touching; broil as instructed).
- Mix together the ground beef, garlic powder, and Worcestershire sauce. Season well with salt and pepper. Portion the beef evenly into small balls about the size of a golf ball.
- Blanch the fries:If using oil: Heat the oil to 300°F (150°C) in a Dutch oven or deep fryer. Fry fries in small batches until softened, about 6 to 10 minutes.If using the oven: Place the fries on a parchment-lined baking sheet. Cook in the oven until tender, about 15 to 20 minutes.
- Heat the olive oil and butter in a skillet over medium heat. Add the onion and cook until softened and lightly golden brown. Add the beef to the pan and flatten each ball using a spatula into a thin patty (work in batches). Cook on both sides for about 20 - 30 seconds per side. Remove from the heat.
- Heat the canola oil to 375°F (191°C).
- Preheat the oven to 350℉ (176℃).
- Spread the inside of the rolls with ketchup and mustard (optional); place half of the cheese on the bottom layer of buns. Layer the beef patties, then top with the remaining cheese and the pickles. Cover with the top half of the buns.
- Brush the tops of the rolls all over with olive oil. Bake for about 8 - 10 minutes or until the cheese is melty and the tops of the rolls are golden and toasted. Pull sliders apart and serve warm.
- Cook the fries while the sliders are in the oven: Fry them in the oil and cook until crispy and golden brown (cook in batches as needed; overcrowding will result in limp fries). Remove to a paper towel-lined large bowl and season with salt immediately to taste.
- Serve the sliders with fries and sparkling water. Serve with ketchup or your choice of condiments on the side.
