Ingredients
Chips and Salsa
- 1 large Tomato diced small
- 2 TBSP Red onion minced
- 2 clove Garlic minced
- 1/2 TBSP Extra-virgin olive oil
- 1 TBSP Fresh cilantro chopped
- 1/4 tsp Chipotle Sauce use preferred amount
- 2 oz Tortilla chips
Seasoning
- Black pepper to taste
- Salt to taste
Avocado Crema
- 1/2 Avocado peeled and pitted
- 4 TBSP Sour cream
- 2 TBSP Fresh cilantro
Burrito
- 10 oz Ground beef
- 1/2 TBSP Taco seasoning or more if needed
- 1/2 cup Black beans drained and rinsed
- 1/2 cup Cheddar cheese shredded
- 2 Tortilla wraps
- 1/4 cup Tomatoes chopped small
- 1/2 cup Romaine lettuce shredded
Fruit Punch
- 24 oz Fruit punch cold
Instructions
- Prep all ingredients per the instructions above.
- Make the salsa: Mix the ingredients (except for the chips) in a bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.
- Make the crema: Place all ingredients into a blender. Pulse until smooth. Season with salt and pepper to taste. (mix in water 1 teaspoon at a time if needed to smooth out the consistency)
- Heat a large non-stick skillet over medium heat. Once hot, add the ground beef and taco seasoning, breaking up the beef with a wooden spoon. Cook until no longer pink. Mix in the black beans and cheese. Season with salt to taste.
- Portion the meat onto the tortilla wrap, fold in the ends, and roll up tight. Garnish with lettuce and tomato.
- Serve the burrito with avocado crema, chips and salsa, and fruit punch.
