Ingredients

  • 6 oz Ground sausage
  • 2 cups Potatoes shredded with a box grater
  • 1/3 cup Onion diced small
  • 1/3 cup Green bell pepper diced small
  • 1 clove Garlic minced
  • 4 Eggs
  • 1/2 cup Cheddar cheese shredded (sharp)
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 2 TBSP Water
  • 2 English muffin toasted
  • 2 TBSP Strawberry jam
  • 2 TBSP Scallions chopped

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prep the ingredients per the instructions above.
  • Heat a large skillet on medium heat, brown sausage until cooked through crumbling into smaller pieces until no longer pink. Remove sausage and set aside, leaving drippings in the pan.
  • Add the onion and peppers to the skillet, saute until the onions are translucent. Add garlic and potatoes. Saute for 5 to 10 minutes, stirring occasionally until the potoes are tender. Add sausage back to the pan.
  • Using a spatula clear small spaces for the eggs. Crack eggs into the prepared spaces, increase the heat to medium-high, and sprinkle shredded cheese over top. Season with salt and pepper. Add the water and cover with a lid. Cook until the eggs are set.
  • Toast the English muffin and spread with jam.
  • Portion the eggs, sprinkle with scallions, and serve with English muffin and orange juice.
