Prep the ingredients per the instructions above.
Heat a large skillet on medium heat, brown sausage until cooked through crumbling into smaller pieces until no longer pink. Remove sausage and set aside, leaving drippings in the pan.
Add the onion and peppers to the skillet, saute until the onions are translucent. Add garlic and potatoes. Saute for 5 to 10 minutes, stirring occasionally until the potoes are tender. Add sausage back to the pan.
Using a spatula clear small spaces for the eggs. Crack eggs into the prepared spaces, increase the heat to medium-high, and sprinkle shredded cheese over top. Season with salt and pepper. Add the water and cover with a lid. Cook until the eggs are set.
Toast the English muffin and spread with jam.
Portion the eggs, sprinkle with scallions, and serve with English muffin and orange juice.
