- Prep the ingredients per the instructions above.  
- Heat a large skillet on medium heat, brown sausage until cooked through crumbling into smaller pieces until no longer pink.  Remove sausage and set aside, leaving drippings in the pan. 
- Add the onion and peppers to the skillet, saute until the onions are translucent. Add garlic and potatoes. Saute for 5 to 10 minutes, stirring occasionally until the potoes are tender. Add sausage back to the pan. 
- Using a spatula clear small spaces for the eggs. Crack eggs into the prepared spaces, increase the heat to medium-high, and sprinkle shredded cheese over top. Season with salt and pepper. Add the water and cover with a lid. Cook until the eggs are set. 
- Toast the English muffin and spread with jam. 
- Portion the eggs, sprinkle with scallions, and serve with English muffin and orange juice.
