Ingredients
- 2 large Egg beaten
- 1/2 cup Milk
- 1/4 cup Pumpkin puree
- 1/2 tsp Vanilla extract
- 1/4 tsp Pumpkin pie spice
- pinch Kosher salt
- 1/2 loaf Brioche bread sliced into 1"-thick slices
- 2 TBSP Butter divided
Pumpkin Butter
- 2 TBSP Butter slightly softened
- 1 TBSP Pumpkin puree
- 1 TBSP Maple syrup
- 1/8 tsp Pumpkin pie spice
- pinch Kosher salt
Serving
- 2 tsp Powdered sugar for dusting
- 2 TBSP Maple syrup for drizzling

- 16 oz Milk cold
Instructions
- In a shallow baking dish, whisk eggs, milk, pumpkin puree, vanilla, pumpkin pie spice, and a pinch of salt. Place bread slices into pumpkin mixture and let soak about 30 seconds per side.
- Make the pumpkin butter: In a medium bowl, whip softened butter with pumpkin, maple syrup, pumpkin spice, and a pinch of salt until light and fluffy.
- In a large nonstick skillet over medium-low heat, melt the butter as needed. Cook each slice until golden, 3 to 4 minutes per side. Repeat to cook all slices.
- Top French toast with pumpkin butter, sprinkle with powdered sugar, and drizzle with maple syrup. Enjoy with milk.
