Ingredients

  • 2 TBSP Extra-virgin olive oil
  • 1/2 TBSP Red wine vinegar
  • 1/4 tsp Dijon mustard
  • 1/4 tsp Dried oregano plus more for sprinkling
  • Salt to taste
  • Black pepper to taste
  • 2 TBSP Mayonnaise
  • 1/2 tsp Fresh thyme minced
  • 2 Sub rolls sliced in half
  • 1 cup Arugula
  • 4 slices Tomato
  • 4 oz Deli ham sliced thin
  • 4 oz Deli Pepperoni sliced thin
  • 4 slices Provolone cheese
  • 1/4 cup Pepperoncini sliced into rings
  • 1/4 cup Red onion sliced thin
  • 2 oz Potato chips
  • 2 Pickle spears

Sparkling Water

  • 16 oz Sparkling water cold

Instructions

  • Whisk the oil, vinegar, dijon, and oregano in a bowl. Season with salt and pepper to taste.
  • Mix the mayo with thyme and season with salt and pepper to taste
  • Drizzle the vinaigrette onto both inside surfaces of the roll. Then spread the mayo onto both insides.
  • Layer with arugula, tomato seasoned with salt and pepper, oregano, ham, pepperoni, cheese, pepperoncini, and onion.
  • Cut in half, and serve with chips, pickle, and sparkling water.
