- 2 TBSP Extra-virgin olive oil
- 1/2 TBSP Red wine vinegar
- 1/4 tsp Dijon mustard
- 1/4 tsp Dried oregano plus more for sprinkling
- Salt to taste
- Black pepper to taste
- 2 TBSP Mayonnaise
- 1/2 tsp Fresh thyme minced
- 2 Sub rolls sliced in half
- 1 cup Arugula
- 4 slices Tomato
- 4 oz Deli ham sliced thin
- 4 oz Deli Pepperoni sliced thin
- 4 slices Provolone cheese
- 1/4 cup Pepperoncini sliced into rings
- 1/4 cup Red onion sliced thin
- 2 oz Potato chips
- 2 Pickle spears
Sparkling Water
- 16 oz Sparkling water cold
Whisk the oil, vinegar, dijon, and oregano in a bowl. Season with salt and pepper to taste.
Mix the mayo with thyme and season with salt and pepper to taste
Drizzle the vinaigrette onto both inside surfaces of the roll. Then spread the mayo onto both insides.
Layer with arugula, tomato seasoned with salt and pepper, oregano, ham, pepperoni, cheese, pepperoncini, and onion.
Cut in half, and serve with chips, pickle, and sparkling water.
