Ingredients
Green Juice
- 1 cup Water
- 2 Apples cut into chunks
- 3 cups Baby spinach
- 2 stalks Celery roughly chopped
- 1/2 Cucumber peeled and roughly chopped
- 1/2 TBSP Lemon juice
Tuna Sandwich
- 10 oz Tuna fish (drained) albacore, chunk white tuna or your preference
- 2 TBSP Celery minced
- 1/2 tsp Lemon juice
- 3 TBSP Mayonnaise more as needed
- Black pepper to taste
- 4 slices Sourdough bread lightly toasted
- 2 TBSP Red onion sliced thin
- 1 cup Butter lettuce cut to fit the bread
- 4 slices Tomato
- 1 cup Carrots cut into 3 inch long sticks
- 4 TBSP Ranch dressing
Instructions
- Make green juice: Prep all of the juice ingredients per instructions above and place all of the ingredients into a blender. Blend until smooth.
- Pour the green juice through a fine-mesh strainer into a storage container. Press on the solids with the back of a spoon to extract as much juice as possible. Discard the solids. Chill the juice before serving.
- Prep ingredients for tuna sandwich per instruction above.
- In a small mixing bowl break up the tuna with a fork. Toss with celery, lemon juice, and mayonnaise as needed until the tuna is to your desired creaminess. Season with pepper to taste. Stir to combine.
- Lightly toast the bread in a toaster oven.
- Assemble sandwich: Top toasted bread with lettuce, Tuna Salad, onion, and tomatoes.
- Serve: Enjoy the sandwich with carrots, ranch dressing, and green juice
