Tuna Sandwich

Ingredients

Green Juice

  • 1 cup Water
  • 2 Apples cut into chunks
  • 3 cups Baby spinach
  • 2 stalks Celery roughly chopped
  • 1/2 Cucumber peeled and roughly chopped
  • 1/2 TBSP Lemon juice

Tuna Sandwich

  • 10 oz Tuna fish (drained) albacore, chunk white tuna or your preference
  • 2 TBSP Celery minced
  • 1/2 tsp Lemon juice
  • 3 TBSP Mayonnaise more as needed
  • Black pepper to taste
  • 4 slices Sourdough bread lightly toasted
  • 2 TBSP Red onion sliced thin
  • 1 cup Butter lettuce cut to fit the bread
  • 4 slices Tomato
  • 1 cup Carrots cut into 3 inch long sticks
  • 4 TBSP Ranch dressing

Instructions

  • Make green juice: Prep all of the juice ingredients per instructions above and place all of the ingredients into a blender. Blend until smooth.
  • Pour the green juice through a fine-mesh strainer into a storage container. Press on the solids with the back of a spoon to extract as much juice as possible. Discard the solids. Chill the juice before serving.
  • Prep ingredients for tuna sandwich per instruction above.
  • In a small mixing bowl break up the tuna with a fork. Toss with celery, lemon juice, and mayonnaise as needed until the tuna is to your desired creaminess. Season with pepper to taste. Stir to combine.
  • Lightly toast the bread in a toaster oven.
  • Assemble sandwich: Top toasted bread with lettuce, Tuna Salad, onion, and tomatoes.
  • Serve: Enjoy the sandwich with carrots, ranch dressing, and green juice
