Ingredients
- 4 oz Breakfast sausage links
- 4 slices Beefsteak Tomatoes
- 2 Slices Sourdough bread lightly toasted (or bread of your preference)
- 1 tbsp Extra-virgin olive oil plus more for drizzling the tomatoes
- 1/4 tsp Dried oregano
- 1 tsp Parmesan cheese grated
- 4 Eggs
- 1/4 tsp Red pepper flakes
- 1 cup Pineapple peeled and diced small (Check the Fruit guide to substitute seasonal fruits)
Instructions
- For the sausage: cook in a 400°F oven to an internal temperature of 160°F using a thermometer.
- Place the tomato slices on the bread, drizzle with a little oil, season with oregano, parmesan, salt and pepper.
- Heat a nonstick pan on medium heat. Once hot, add the oil. Crack in the eggs. Cook until the whites of the eggs are firm and yolk is soft. (Cover with a lid and add 1 to 2 tablespoons of water to help cook the whites of the eggs. Season with salt and pepper.
- Serve the toast with eggs (sprinkled with red pepper flakes if desired), sausage, and pineapple.
