Ingredients
- 1.5 cup Fresh fennel
- 1 tbsp Extra-virgin olive oil
- 1/2 Orange peeled and cut into small bite sized pieces
- 1 tsp Fresh parsley chopped
Dressing
- 3 tsp Extra-virgin olive oil
- 1 tsp Sherry vinegar
- 1/2 tsp Dijon mustard
- 1 clove Garlic
Instructions
- Preheat the oven to 375 degrees.
- Cut the bulb of the fennel into small wedges. Then toss with oil, salt and pepper. Roast in the oven until tender and golden brown. Tossing occasionally throughout cooking to get an even golden brown.
- Whisk all the ingredients for the dressing in a bowl. Season with salt and pepper to taste. Set aside.
- Toss the fennel, orange, parsley, and dressing together in a bowl.
- Serve.
