Ingredients

  • 2 Sausage links use your favorite sausage (about 3 to 4oz per link)
  • 2 Long rolls roll or bun best suited to fit the sausage
  • 1/2 cup Sauerkraut more if desired
  • 2 tbsp Cherry pepper sandwich spread substitute relish or your favorite sandwich condiments
  • 2 tbsp Yellow mustard or mustard of your choice
  • 2 Pickles halved

Pierogies

  • 4 Pierogies
  • 1 tbsp Butter
  • 2 tsp Sour cream
  • 1 tsp Fresh chives minced

Instructions

  • Preheat the oven to 400 degrees.
  • Cook the sausage to an internal temperature of 150°F using a thermometer getting a nice char on all sides.
  • For the pierogies: bring a salted pot of water to a boil. Cook the pierogies until soft, drain well. Then heat a nonstick pan on medium heat. Once hot, melt the butter. Sear the pierogies until golden brown on both sides. Season with salt and pepper to taste.
  • Place the cooked sausage on the roll with sauerkraut, condiment spread, and mustard. Serve with pierogies, sour cream, and pickle. Garnish with chives.
