Ingredients
- Nonstick spray
- 8 slices Sourdough bread
- 1 cup Cheddar cheese shredded
- Leftover Mediterranean Eggplant Pie
Sauce
- 2 tbsp Mayonnaise
- 2 tbsp Ketchup
- 2 tsp Relish
Instructions
- Heat a panini style grill. Lightly grease with nonstick spray.
- In a bowl, whisk together all the ingredients for the sauce.
- Cook the sandwich until golden brown and the cheese has melted. (Alternatively cook in a nonstick pan on medium heat, greased with nonstick spray as needed).
- Serve with sauce and leftover Mediterranean eggplant pie.
