Ingredients

  • Nonstick spray
  • 8 slices Sourdough bread
  • 1 cup Cheddar cheese shredded
  • Leftover Mediterranean Eggplant Pie

Sauce

  • 2 tbsp Mayonnaise
  • 2 tbsp Ketchup
  • 2 tsp Relish

Instructions

  • Heat a panini style grill. Lightly grease with nonstick spray.
  • In a bowl, whisk together all the ingredients for the sauce.
  • Cook the sandwich until golden brown and the cheese has melted.
    (Alternatively cook in a nonstick pan on medium heat, greased with nonstick spray as needed).
  • Serve with sauce and leftover Mediterranean eggplant pie.
