Ingredients
- 1 cup Butternut Squash peeled, seeded, and cut into small bite sized cubes
- 1/2 Tbsp Extra-virgin olive oil
- 1/4 tsp Garlic powder
- 1 Tbsp Pepitas hulled pumpkin seeds
Instructions
- Preheat oven to 400 degrees F
- Toss butternut squash with olive oil, garlic powder, salt and pepper on a baking sheet.
- Roast in the preheated oven until the squash is tender and lightly browned, about 20 to 30 minutes.
- Toss with pepitas, season with salt if needed and serve.
