Instructions
Preheat oven to 400 degrees F
Toss butternut squash with olive oil, garlic powder, salt and pepper on a baking sheet.
Roast in the preheated oven until the squash is tender and lightly browned, about 20 to 30 minutes.
Toss with pepitas, season with salt if needed and serve.
