Ingredients
- 2 tbsp Extra-virgin olive oil
- 1/4 cup Onion diced
- 1/2 cup Carrots diced
- 1/2 cup Celery diced
- 4 cloves Garlic chopped
- 1 cup Fire roasted tomatoes diced is preferred
- 5 cups Chicken broth
- 2 sprigs Fresh thyme
- 1/2 tsp Dried oregano
- 1 cup Cannellini beans drained and rinsed
- 3/4 cup Ditalini pasta or your choice of small pasta
- 2 tsp Parmesan cheese grated
- Fresh parsley garnish
- 8 Crackers
Instructions
- Heat a pot over medium heat. Once hot, add the oil. Saute the onion, carrot, celery, and garlic until the celery has softened.
- Add the tomatoes, broth, thyme, oregano, beans and season well with salt. Cover with a lid and bring to a simmer for 15-20 minutes to build flavor. Taste and adjust the seasoning with salt and pepper.
- Add the pasta, cover with a lid and cook until tender. Refer to the instruction on the package for cooking time.
- The pasta will soak up the broth, add more as needed prior to serving. Season with salt to taste.
- Discard thyme sprigs before serving. Garnish with parmesan cheese and parsley. Serve with crackers.
Notes
