Heat a pot over medium heat. Once hot, add the oil. Saute the onion, carrot, celery, and garlic until the celery has softened.
Add the tomatoes, broth, thyme, oregano, beans and season well with salt. Cover with a lid and bring to a simmer for 15-20 minutes to build flavor. Taste and adjust the seasoning with salt and pepper.
Add the pasta, cover with a lid and cook until tender. Refer to the instruction on the package for cooking time.
The pasta will soak up the broth, add more as needed prior to serving. Season with salt to taste.
Discard thyme sprigs before serving. Garnish with parmesan cheese and parsley. Serve with crackers.
