Tomato Feta Toast

Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 2 tbsp Red onion
  • 1 cup Grape tomatoes quartered
  • 8 Eggs beaten
  • 4 slices Sourdough bread toasted and buttered if desired (or bread of your choice)
  • 2 tsp Feta cheese crumbled fine
  • 1 tbsp Scallions chopped
  • 1.5 cups Grapes (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • Heat a non-stick pan over medium heat. Once hot, add the oil. Saute the onion until softened. Then add in the tomatoes and eggs. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste. 
  • Serve the eggs over toast, top with feta and scallions; serve with grapes.
