Ingredients
- 1.25 cups Chicken broth
- 1 cup Bulgur wheat
- 1/2 tsp Salt
- 1 tbsp Extra-virgin olive oil
- 2 tsp Red wine vinegar
- 2 tbsp Fresh parsley chopped
- 1 tbsp Fresh cilantro chopped
- 1/2 cup Cucumber diced small
Instructions
- In a saucepan over medium heat, bring the broth to a boil. Place the bulgur in a large bowl with salt and pour in the broth. Cover the bowl tightly with plastic wrap and let sit for 15-30 minutes, or until all of the water is absorbed. Let cool, then fluff with a fork. Refer to the instructions on the package for preparation.
- Stir in the remaining ingredients. Season with salt and pepper to taste.
