Bulgur Pilaf

Ingredients

  • 1.25 cups Chicken broth
  • 1 cup Bulgur wheat
  • 1/2 tsp Salt
  • 1 tbsp Extra-virgin olive oil
  • 2 tsp Red wine vinegar
  • 2 tbsp Fresh parsley chopped
  • 1 tbsp Fresh cilantro chopped
  • 1/2 cup Cucumber diced small

Instructions

  • In a saucepan over medium heat, bring the broth to a boil. Place the bulgur in a large bowl with salt and pour in the broth. Cover the bowl tightly with plastic wrap and let sit for 15-30 minutes, or until all of the water is absorbed. Let cool, then fluff with a fork. Refer to the instructions on the package for preparation.
  • Stir in the remaining ingredients. Season with salt and pepper to taste.
