Ingredients
- 3 tbsp Mayonnaise
- 2 tbsp Cranberry jelly use canned or make your own
- 4 Whole wheat tortilla use your favorite flavor wrap
- 2 cups Spring mix
- 1/2 lb Deli turkey breast or use fresh roasted turkey see the deli meats tab for recipe
- 8 slices Tomato sliced into half circles
Artichoke Tomato Salad
- 1 cup Artichoke hearts cut into bite sized chunks
- 1/2 cup Grape tomatoes quartered
- 2 cloves Garlic minced
- 2 tbsp Extra-virgin olive oil
- 1 tsp Fresh sage chopped
- 2 tbsp Fresh parsley chopped
Instructions
- In a bowl mix together all of the ingredients for the artichoke salad in a bowl. Season with salt and pepper to taste, then set aside.
- In a bowl mix the mayo and cranberry until fully combined.
- Warm the wraps on both sides in a nonstick pan on medium heat.
- Spread the mayo onto the wrap. Layer with spring mix, turkey, and tomato. Season with salt and pepper. Fold in the ends and roll up tight.
- Cut in half and serve with artichoke salad.
