Turkey Wrap

Ingredients

  • 3 tbsp Mayonnaise
  • 2 tbsp Cranberry jelly use canned or make your own
  • 4 Whole wheat tortilla use your favorite flavor wrap
  • 2 cups Spring mix
  • 1/2 lb Deli turkey breast or use fresh roasted turkey see the deli meats tab for recipe
  • 8 slices Tomato sliced into half circles

Artichoke Tomato Salad

  • 1 cup Artichoke hearts cut into bite sized chunks
  • 1/2 cup Grape tomatoes quartered
  • 2 cloves Garlic minced
  • 2 tbsp Extra-virgin olive oil
  • 1 tsp Fresh sage chopped
  • 2 tbsp Fresh parsley chopped

Instructions

  • In a bowl mix together all of the ingredients for the artichoke salad in a bowl. Season with salt and pepper to taste, then set aside.
  • In a bowl mix the mayo and cranberry until fully combined.
  • Warm the wraps on both sides in a nonstick pan on medium heat.
  • Spread the mayo onto the wrap. Layer with spring mix, turkey, and tomato. Season with salt and pepper. Fold in the ends and roll up tight.
  • Cut in half and serve with artichoke salad.
