Ingredients
- 8 Naan Sandwich Rounds or sandwich thins
- 2 cups Spring mix
- 8 slices Tomato
- 8 oz Deli turkey breast or use fresh roasted turkey see recipe in Deli meats tab
- 4 slices Mozzarella cheese
- 1/2 cup Red onion shaved
- 1 Avocados pitted and sliced
- 2 oz Potato chips
- 4 Pickle spears
Dressing
- 1 tsp Lemon juice
- 4 tsp Extra-virgin olive oil
- 1 tsp Fresh thyme chopped
- 1 tsp Dijon mustard
- 1 clove Garlic grated
Instructions
- For the dressing: whisk all ingredients in a bowl until fully combined. Season with salt and pepper to taste.
- Warm the naan on both sides in a nonstick pan over medium heat.
- Layer the naan with spring mix, tomato seasoned with salt and pepper, turkey, cheese, onion, and avocado. Spoon the dressing on.
- Serve with chips and pickles.

Pro tips: Butterfly the chicken: Lay the breasts down on a cutting board, using a sharp knife parallel to the cutting board slice the breasts through the middle (carefully) all the way in half.Â
