Ingredients
- Nonstick spray
- 4 slices Bacon
- 8 Eggs beaten
- 8 Sourdough bread lightly toasted (or your choice of bread)
- 1 Avocados pitted and sliced
- 1/2 cup Cheddar cheese shredded
- 1 Apple sliced (Check the Fruit guide to substitute seasonal fruits)
Instructions
- Preheat a panini style grill. Lightly grease with nonstick spray.
- In a nonstick pan on medium low heat cook the bacon on both sides until it is crisp. (Reserve the bacon grease for cooking the eggs if desired)
- Heat a nonstick pan on medium heat. Add 1 to 2 teaspoons of the reserved bacon grease to the pan. Crack the eggs into the pan. Cook until the whites are mostly set then flip over using a spatula. Cook for about 1 minute until the egg is firm. Season with salt and pepper.
- Layer the bread with avocado, bacon, cheese, and eggs.
- Cook on the panini grill until golden brown on both sides.
- Cut in half and serve with apple.
