Ingredients
- 3/4 lb Chicken breast boneless skinless sliced thin
- 1 tsp Garlic powder
- 1 tsp Paprika
- 1/2 tsp Dried oregano
- 1 tbsp Extra-virgin olive oil
- 2 cups Leeks sliced thin (just the stalk, discard the top leaves)
- 4 Sub rolls
- 2 cups Spring mix
- 8 slices Tomato
- 4 slices Swiss cheese halved
- 2 Pickles cut into rounds
Remoulade
- 3 tbsp Mayonnaise
- 1 tbsp Relish
- 2 tsp Whole grain mustard
- 1 tsp Hot sauce
Instructions
- Season the chicken with garlic powder, paprika, oregano, salt and pepper.
- Heat a non-stick pan or cast iron skillet over medium heat. Once hot, add the oil. Saute the leeks until soft. Then add in the chicken and brown well on all sides until no longer pink in the middle.
- In a bowl, mix the ingredients for the remoulade. Season with salt and pepper. Taste and adjust any of the ingredients as needed.
- Spread the remoulade on both halves of the roll. Layer the roll with spring mix, chicken, tomato seasoned with salt pepper, and cheese.
- Cut in half and serve with pickles.
