Ingredients
- 4 cups Romaine lettuce chopped
- 12 slices Cucumber
- 3 tbsp Pecans chopped
- 1/4 cup Carrots peeled and shaved
- 2 tsp Crumbled blue cheese small crumbles
Vinaigrette
- 3 tsp Extra-virgin olive oil
- 1 tsp Balsamic vinegar
- 1/2 tsp Dijon mustard
Instructions
- Place the lettuce in a bowl with cucumber and pecan on top. Use a vegetable peeler to shave the carrot onto the top of the salad.
- Whisk together ingredients for the vinaigrette. Dress the salad right before serving. Garnish with blue cheese crumbles.
