Pecan Salad

Ingredients

  • 4 cups Romaine lettuce chopped
  • 12 slices Cucumber
  • 3 tbsp Pecans chopped
  • 1/4 cup Carrots peeled and shaved
  • 2 tsp Crumbled blue cheese small crumbles

Vinaigrette

  • 3 tsp Extra-virgin olive oil
  • 1 tsp Balsamic vinegar
  • 1/2 tsp Dijon mustard

Instructions

  • Place the lettuce in a bowl with cucumber and pecan on top. Use a vegetable peeler to shave the carrot onto the top of the salad.
  • Whisk together ingredients for the vinaigrette. Dress the salad right before serving. Garnish with blue cheese crumbles.
