Ingredients
- 4 Sub rolls lightly toasted
- 2 cups Iceberg lettuce shredded
- 8 slices Tomatoes
- 3/4 lb Deli turkey breast
- 4 slices Monterey jack cheese halved
- 1 Avocados pitted and sliced
Chipotle Aioli
- 4 tbsp Mayonnaise
- 1 tsp Chipotle Sauce use more or less to taste
Pico De Gallo
- 1 cup Grape tomatoes quartered
- 2 tsp Lime juice
- 1 clove Garlic minced
- 2 tbsp Red onion minced
- 2 tbsp Fresh cilantro chopped
- 1 tbsp Extra-virgin olive oil
- 2 oz Tortilla chips
Instructions
- Lightly toast the rolls.
- For the aioli: Whisk all of the ingredients together in a bowl. Season with salt. Taste and adjust any of the ingredients as needed. Spread into both halves of the roll.
- For the pico: Mix the ingredients (except the tortilla chips) in a bowl. Taste and adust any of the ingredients as needed. Season with salt and pepper to taste. Let sit until ready to serve.
- Layer the sandwich with lettuce, tomato seasoned with salt and pepper, turkey, cheese, and avocado.
- Cut in half and serve with tortilla chips and pico de gallo.
