Turkey Torta

Ingredients

  • 4 Sub rolls lightly toasted
  • 2 cups Iceberg lettuce shredded
  • 8 slices Tomatoes
  • 3/4 lb Deli turkey breast
  • 4 slices Monterey jack cheese halved
  • 1 Avocados pitted and sliced

Chipotle Aioli

  • 4 tbsp Mayonnaise
  • 1 tsp Chipotle Sauce use more or less to taste

Pico De Gallo

  • 1 cup Grape tomatoes quartered
  • 2 tsp Lime juice
  • 1 clove Garlic minced
  • 2 tbsp Red onion minced
  • 2 tbsp Fresh cilantro chopped
  • 1 tbsp Extra-virgin olive oil
  • 2 oz Tortilla chips

Instructions

  • Lightly toast the rolls.
  • For the aioli: Whisk all of the ingredients together in a bowl. Season with salt. Taste and adjust any of the ingredients as needed. Spread into both halves of the roll.
  • For the pico: Mix the ingredients (except the tortilla chips) in a bowl. Taste and adust any of the ingredients as needed. Season with salt and pepper to taste. Let sit until ready to serve.
  • Layer the sandwich with lettuce, tomato seasoned with salt and pepper, turkey, cheese, and avocado.
  • Cut in half and serve with tortilla chips and pico de gallo.
