Ingredients

  • 4 English muffin lightly toasted (or bread of your choice)
  • 2 tsp Extra-virgin olive oil
  • 8 oz Ground Italian sausage formed into patties
  • 4 slices American cheese
  • 8 Eggs
  • 1.5 cups Cantaloupe peeled and cut into bite sized chunks (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • Lightly toast the English muffins.
  • Heat half the oil in a non-stick pan over medium-low heat. Cook the sausage patty on both sides until it is no longer pink in the middle to an internal temperature of 155 degrees using a thermometer. Melt the cheese on top and place on the English muffin.
  • Add the remaining oil to the pan. Crack the eggs into the pan and cook until they start to set. Break the yolks and flip the eggs over to cook through. Season with salt and pepper. Once cooked, place on the english muffin and serve with cantaloupe.

Notes

Pro Tip: Purchase a container of pre-cut cantaloupe instead of purchasing a whole one if desired.
