Ingredients

  • 3/4 lb Chicken breast boneless skinless
  • 1 Tbsp Extra-virgin olive oil
  • 8 oz Cheese tortellini
  • 1 cup Grape tomatoes halved
  • 1 cup Black olives cut into small chunks
  • 1/3 cup Pesto sauce or more if needed
  • 4 tsp Pine nuts
  • Fresh parsley garnish

Instructions

  • Preheat a grill or grill pan on medium heat.
  • Season the chicken on both sides with salt and pepper and drizzle with oil. Grill the chicken on both sides to an internal temperature of 160 degrees using a thermometer and nicely marked. Set aside to rest on a cutting board. Dice the chicken when ready to use.
  • In the meantime, in a pot of salted boiling water, cook the tortellini according to the directions on the package. Drain well and set aside.
  • In a bowl, mix the diced chicken, tortellini, tomatoes, olives, and pesto sauce. Portion and top with pine nuts and parsley.
