Ingredients

  • 6 oz Sirloin steaks sliced thin
  • 1/2 cup Maitake mushrooms sectioned into bunches (or mushroom of your choice)
  • 1 tbsp Extra-virgin olive oil

Marinade

  • 2 tbsp Reduced-sodium soy sauce
  • 1 tbsp Ketchup
  • 1/4 tsp Dashi
  • 1/2 tsp Rice wine vinegar
  • 1/2 tsp Sesame oil
  • 1 cloves Garlic grated
  • 1 tbsp Scallions chopped, plus more for garnish

Instructions

  • Slice the beef into thin squares about 1 inch by 1 inch long.
  • Whisk the marinade ingredients together in a large bowl. Add the beef and mix well. Let sit for 30 minutes, or longer if desired.
  • Section the maitake mushrooms into small bunches.
  • Heat a nonstick pan on medium high heat. Add the olive oil and mushrooms. Gently saute until golden brown then remove from the pan and set aside.
  • Add the beef to the pan (reserve the marinade), saute the beef for 1 to 3 minutes to brown nicely. Then remove from the pan. Turn down the heat to medium and add the marinade to the pan. Simmer until the marinade thickens into a smooth sauce. Taste and adjust the dashi as needed. Remove from the heat and toss in the beef and mushrooms.
  • Garnish with scallions.
