Ingredients
- 2 medium Potatoes cut into bite sized pieces
- 1 tbsp Extra-virgin olive oil
- 1 tsp Garlic powder
- 12 Grape tomatoes halved
- 1 cup Green Peas
- 2 tbsp Pesto sauce
- 2 tbsp Fresh parsley chopped
- 2 tbsp Scallions chopped
- 2 tbsp Fresh mint chopped
Instructions
- Preheat the oven to 400 degrees.
- Mix the potatoes on a foil lined baking sheet with oil, garlic powder, salt and pepper. Bake in the oven for 20 minutes, then flip the potatoes over and add the tomatoes. Bake for another 15 to 20 minutes until the potatoes are golden brown and the tomatoes are soft.
- In a bowl, mix the potatoes, tomatoes, peas, pesto, parsely, scallions, and mint. Season with salt to taste as needed before serving.
