Ingredients

  • 2 oz Mediterranean Gouda or choose your favorite cheeses
  • 2 oz Stilton Cheese or choose your favorite cheeses
  • 2 oz Prosciutto sliced very thin (or choose your favorite cured meat)
  • 2 oz Soppressata (or choose your favorite cured meat)
  • 2 oz Coppa sliced (or choose your favorite cured meat)
  • 1/2 cup Assorted olives pre pitted
  • 1/2 cup Almonds
  • 1/2 cup Pistachio nuts
  • 4 tbsp Raspberry jam
  • 8 slices Crusty bread sliced very thin into crostini's and toasted (drizzle with olive oil and season with salt and pepper)

Homemade Crackers

  • 1 cup All-purpose flour or store bought crackers
  • 2 tsp Fresh thyme minced
  • 1/2 tsp Salt
  • 1 tsp Sugar
  • 2 tbsp Extra-virgin olive oil
  • 1/3 cup Water

Instructions

  • For the crackers: Preheat the oven to 400 degrees. Mix the flour, thyme, pepper, salt, sugar, and olive oil in a bowl until combined well. Add the water a little at a time just until the dough starts to stick together. Press the dough together gently with your hands to form a ball. Let the dough rest for about 10 minutes. Roll out the dough about a 1/4 of an inch thick. Once it’s rolled, place it on a parchment paper lined baking sheet and cut it into whatever shapes you would like. Bake for 5 minutes then flip each cracker piece and bake another 5 minutes. Turn the oven off and let the crackers sit in the oven for 10 to 15 minutes to really dry out and get crispy.
  • Arrange the meats, cheese's, nuts, olives, crackers, crostini's, and jam on a plate and serve.
