Ingredients
- 4 Rice paper sheets
- 1/2 cup Carrots shredded
- 4 Radish sliced thin
- 1 cup Cucumber cut into thin strips
Peanut Sauce
- 4 tbsp Reduced-sodium soy sauce
- 2 tsp Peanut butter
- 1/2 tsp Sesame oil
- 2 tsp Rice wine vinegar
- 1/2 tsp Red pepper flakes use more or less to your level of spicyness
- 2 tbsp Scallions chopped
Instructions
- Fill a shallow bowl with warm water. Soak a single rice paper sheet for 5 seconds.
- Remove and carefully place on a flat surface. Layer with carrots, radish, and cucumber right in the center of the paper.
- Fold both ends to the center and gently roll the sheet as tightly as you can without ripping. Continue with remaining sheets and filling. Then set aside to dry for 1-2 minutes.
- For the sauce, whisk all ingredients together. Taste and adjust any of the ingredients as needed.
- Cut the rolls in half and serve with dipping sauce.
