Vegetable Rolls

Ingredients

  • 4 Rice paper sheets
  • 1/2 cup Carrots shredded
  • 4 Radish sliced thin
  • 1 cup Cucumber cut into thin strips

Peanut Sauce

  • 4 tbsp Reduced-sodium soy sauce
  • 2 tsp Peanut butter
  • 1/2 tsp Sesame oil
  • 2 tsp Rice wine vinegar
  • 1/2 tsp Red pepper flakes use more or less to your level of spicyness
  • 2 tbsp Scallions chopped

Instructions

  • Fill a shallow bowl with warm water. Soak a single rice paper sheet for 5 seconds.
  • Remove and carefully place on a flat surface. Layer with carrots, radish, and cucumber right in the center of the paper.
  • Fold both ends to the center and gently roll the sheet as tightly as you can without ripping. Continue with remaining sheets and filling. Then set aside to dry for 1-2 minutes.
  • For the sauce, whisk all ingredients together. Taste and adjust any of the ingredients as needed.
  • Cut the rolls in half and serve with dipping sauce.
