Ingredients
- 2 tbsp Extra-virgin olive oil
- 1 cup Potatoes peeled and shredded
- 1/4 cup Red onion diced
- 1/2 cup Green bell pepper diced
- 6 oz Chicken sausage links chopped
- 8 Eggs beaten
- 4 oz Cheddar cheese shredded
- 4 slices Sourdough bread toasted (or bread of your preference)
- 1 cup Strawberries sliced (Check the Fruit guide to substitute seasonal fruits)
- 2 tbsp Scallions chopped
Instructions
- Preheat the oven broiler on low.
- Heat oil in a nonstick pan over medium heat. Saute the potatoes and season with salt and pepper until they start to become tender. Add in the onion, pepper, and chicken sausage; saute until the vegetables are tender and the chicken sausage is browned and no longer pink.
- Mix in the egg and cook until the bottom starts to set. Top with cheese.
- Transfer the pan underneath the oven broiler, cook until the eggs are firm throughout.
- Toast the bread.
- Portion the eggs and serve with toast and strawberries. Garnish with scallions.
