Heat oil in a nonstick pan over medium heat. Saute the potatoes and season with salt and pepper until they start to become tender. Add in the onion, pepper, and chicken sausage; saute until the vegetables are tender and the chicken sausage is browned and no longer pink.
Mix in the egg and cook until the bottom starts to set. Top with cheese.
Transfer the pan underneath the oven broiler, cook until the eggs are firm throughout.
Toast the bread.
Portion the eggs and serve with toast and strawberries. Garnish with scallions.
