Ingredients
- 1 cup Oatmeal
- 2 tbsp Extra-virgin olive oil
- 6 oz Chicken sausage links diced
- 12 Grape tomatoes halved
- 8 Eggs
- 6 tbsp Feta cheese
- 1 tbsp Fresh chives chopped
- 1 cup Blueberries (Check the Fruit guide to substitute seasonal fruits)
Instructions
- In a pot, cook the oatmeal according to the directions on the package. Season with salt and pepper.
- Heat half of the oil in a non-stick pan over medium heat, saute the chicken sausage until no longer pink and cooked through. Add in the tomatoes and saute until they start to soften. Then set aside.
- Heat the oil in a non-stick pan over medium heat. Crack the eggs into the pan. Cook until the whites start to set, then give the pan a jiggle just to make sure there's no sticking. Continue to cook over low heat until the whites become firm. Gently flip the eggs over and cook for 20-30 seconds longer.
- Top the oatmeal with eggs, chicken sausage, tomatoes, feta, and chives. Serve with blueberries.
