  • In a pot, cook the oatmeal according to the directions on the package. Season with salt and pepper.
  • Heat half of the oil in a non-stick pan over medium heat, saute the chicken sausage until no longer pink and cooked through. Add in the tomatoes and saute until they start to soften. Then set aside.
  • Heat the oil in a non-stick pan over medium heat. Crack the eggs into the pan. Cook until the whites start to set, then give the pan a jiggle just to make sure there's no sticking. Continue to cook over low heat until the whites become firm. Gently flip the eggs over and cook for 20-30 seconds longer.
  • Top the oatmeal with eggs, chicken sausage, tomatoes, feta, and chives. Serve with blueberries.
