Ingredients

  • 3/4 pound Italian Turkey Sausage
  • 8 oz Cheese tortellini
  • 1 cup Kalamata olives halved
  • 12 Grape tomatoes halved
  • 1 cup Green bell pepper chopped
  • 6 oz Mozzarella balls quartered
  • 2 tbsp Fresh parsley chopped
  • 4 slices Crusty bread toasted

Dressing

  • 4 tsp Extra-virgin olive oil
  • 1 tsp Red wine vinegar
  • 1 tsp Lemon juice
  • 1/4 tsp Dried basil
  • 1/4 tsp Garlic powder
  • 1/2 tsp Dried oregano

Instructions

  • Preheat grill or grill pan.
  • Cook the sausage to an internal temperature of 155 degrees using a thermometer. Set aside to rest for 3 to 5 minutes before dicing into small pieces.
  • Cook the tortellini according to package directions. Once cooked, rinse under cool water to cool, drain well and add to a large bowl. Add the olives, tomatoes, peppers, mozzarella, parsley, and diced sausage.
  • Whisk all the ingredients for the dressing in a bowl and pour over the tortellini.
  • Season with salt and pepper to taste. Serve with crusty bread.
