Cook the sausage to an internal temperature of 155 degrees using a thermometer. Set aside to rest for 3 to 5 minutes before dicing into small pieces.
Cook the tortellini according to package directions. Once cooked, rinse under cool water to cool, drain well and add to a large bowl. Add the olives, tomatoes, peppers, mozzarella, parsley, and diced sausage.
Whisk all the ingredients for the dressing in a bowl and pour over the tortellini.
Season with salt and pepper to taste. Serve with crusty bread.
