Crispy Potato Scramble

Ingredients

  • 3 tbsp Extra-virgin olive oil
  • 5 Baby potatoes sliced 1/4 inch thick
  • 8 Eggs beaten
  • 6 oz Cheddar cheese shredded
  • 3 tbsp Scallions chopped
  • 6 oz Chicken sausage links diced
  • 4 slices Sourdough bread toasted and buttered if desired (or bread of your choice)
  • 1 Apple sliced (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • Heat the oil in a non-stick pan over low-medium heat. Add in the potatoes and season with salt; cook for 3 - 5 minutes per side until you get a nice golden brown and they become crispy and tender inside. Set aside on paper towels and season with salt.
  • Add the chicken sausage to the pan and brown, then add the eggs and cheese. Move the eggs around the pan until they become firm and fluffy but still moist. Stir in the scallions. Season with salt and pepper.
  • Toast the bread and butter it if desired.
  • Serve with crispy potatoes, toast, and apple.
